The name Shymer combines the words Shyraz (Syrah) and Merlot. Also, it echoes the French word for Chimera, the fantastical creature of Greek mythology, the symbol of seemingly impossible dreams and wishes, such as the Marzotto family’s desire to create a wine such as this. Floral notes and aromas of red berries, followed by a barrique woodiness and toasty hints of bacon, coffee and lastly, a spicy finish of cinnamon, vanilla and nutmeg.
